Ingredients
Wansford Trout
Oven cooked avocado
Buttered shallots
Chopped tomatoes
Lemon
Hollandaise sauce
Chaource cheese
Pea shoots
Salt & pepper
Potato fish chips

Method
Bake the trout fillet and avocados with avocado oil for 8 minutes, then mix together the baked trout, shallots, tomatoes, hollandaise sauce, salt & pepper, topping with chaource cheese, then place in the oven for a further 3 minutes then finish with adding the pea shoots and potato fish chips on a rustic board, add lemons and serve!
